add logging option and improve help #38

The option --logFile now enables keeping track of the engine's UCI output.

Thanks to @niklasf for pointing me in the right direction with https://github.com/niklasf/python-chess/discussions/1081#discussioncomment-9407575.

Also make the help text a bit more consistent.
