Improve experiment replay infrastructure, switch to median filtering in motion analyzer, and small improvements

This PR aims does the following:

• Add offline mode to navController for use in experiment replay
• Add Docker compose file to dump and replay data with different profiles
• Use a median filter instead of a FIR in motionAnalyzer to preprocess ankles position
• Make the resolution of skeletonViewer configurable
• Lower frequency of skeletonRetriever to 10Hz (since yarpOpenPose publishes data at 10Hz)
• Enforce acquisition and processing of RGBD images at resolution 424x240
• In file realsense2.ini, flip the image by 180 deg since we MUST use the camera mounted above the head of R1.
• Update xml application files with latest fixes
