[HumanStateVisualizer] Added custom options for window dimensions (https://github.com/robotology/human-dynamics-estimation/pull/341).

Since https://github.com/robotology/human-dynamics-estimation/issues/346 has been merged, I have updated this PR and we can merge it after the CI checks
