Update ftshoes PRO01 inSitu calibration matrix #23

The calibration procedure (https://github.com/dic-iit/element_ftSk_Shoes/wiki/How-to-calibrate-ftShoes) has been recently applied to the PRO01 FT Shoe. With this PR I am updating the calibration matrix in the configuration file.
