Updates the site to use NextJS 13, including:

fixes for new next/link usage
fixes for updated next/image usage
move some code from _app.js to a new _document.js to since you can't have a <link href> in _app.js any more
tweaks to the config to match the current example projects posted by Next JS
replace class with className in the mailchimp component
