Includes specific shop configuration regarding EU GDPR compliance, and a statement that our own servers are in the EU. Also adds a link to Shopify's Cookie Policy. And an additional statement on our not having a current Google Analytics configuration active within our shop setup.

The CCPA link provided is considered redundant, given our stated configuration, but is included regardless.
