Document in table which datasets we ended up using and where they come from. #106

Part of it is in the readme, but I have new datasets that I'm not documenting which can be confusing.

To document this, I will need to run the scripts run_polygons_date_filter.py and shp_exports_for_assets.py in the new environment. That way I will be able to document where I'm pulling off each of the files.
