there is an application that detects jailbreak. Is it possible write tweak for this app and enable some functionality that prevent to detect jailbreak? Is this how it will work?

yes you can write different tweaks for apps that detect jailbreak to bypass them. but obviously roothide is to prevent people from falling into this kind of pain. roothide is not a tweak.
