[SCHEMA] After launch of schema v2.0 consider adding support for ISO 639-2 #181

Describe the problem you would like to solve Some languages in use by current and potential ROR adopters are not included in ISO 639-1 (two-letter language codes).

Describe the schema change that you would like in order to solve the problem Support for ISO 639-2, three-letter language codes, in the ROR schema

Who would benefit from this change? Specific organizations who have requested this change include the University of Iowa and the Modern Language Association

Noting as well that we're unable to support tagging of many indigenous languages in the absence of ISO 639-2, e.g. "X̱aaydaG̱a Waadlux̱an Naay" as "hai" on https://github.com/ror-community/ror-updates/issues/12741, as these are largely excluded from 639-1.
