Demo 1 - ROS2 port again #360

Replaces #348 since some rebasing was required after #350 was merged. It's still @jrgnicho's original set of commits, just on a different base.

Forgot to mention this undoes the rename of the demo since that was too messy to pull off with bringing back the ROS 1 version. We can reevaluate if a rename makes sense once everything is settled.

I just did one more test and confirmed everything still works fine on this branch.
