Update sub-mesh extraction

This PR revises the addition of the sub-mesh extraction capability added in #166:

Adds an interface for performing point cloud subset extraction in addition to sub-mesh extraction
Updates the implementation of the extruded polygon selection to provide both point cloud subset and sub-mesh extraction
Renames the directory of the files to the more general name "subset_extraction"
