Update assimp #1215

Switch to assimp 5.4.1 remove c++14 assimp compile standard

This was discussed during the issue triage meeting and the conclusion is that we don't want to diverge from the version in Ubuntu Noble, which is 5.3.1. So I'm going to close this pr, but if you want to continue to discuss it here that's fine, and we can reopen it if needed.
