This PR is an update to the plotting functions in the verification workflow, and relevant scripts to these added functionality. Basically all of them had to go through some iteration of grabbing the relevant sonde names, and then grabbing the relevant data from the correct source. I created a small function to find the names of the correct data sources for the sondes. Had to do a good amount of on the fly fixes that should suffice for now, but should get looked into in the future. Also included are some functions that I deleted from src.
