Document new logic for known senders

After https://github.com/rspamd/rspamd/pull/4895 is being merged, we need to have the following:

• [ ] Describe new features added to both replies and known_senders plugins
• [ ] Document configuration options
• [ ] Document expiry logic
• [ ] Write a paragraph for release notes
