Update README #185

Fixes #181 #182

Update old info in README. Remove the coverage section because it's very old and we haven't done that same test since then. Nowadays we just go off Package Manager's binary coverage, but I'm not sure if that's worth mentioning anymore. The coverage has generally been high for a while now.

@gaborcsardi I mentioned pak here, but anything else you want to add/change?

Maybe mention that pak will automatically install (or print) the system requirements when you are installing packages, and link to the main article about sysreqs at https://pak.r-lib.org/reference/sysreqs.html? Thanks!
