A new 'auto-random' collection has been added to EmulationStation-dev and will likely go into production. I added snes and nes icons for it that I think match the aesthetic of your theme. I've already implemented it into my own RetroPie build and think it looks great. Open to feedback or for you to take it and change it however you want.
