Update to 0.21.1, use faster bitcoincore.org mirror #117

Updates to the latest version 0.21.1 which includes the Taproot softfork activation code. Because bitcoin.org doesn't have the release yet (and has download speed throttling activated), we use the more up-to-date mirror bitcoincore.org.
