Consolidate and improve docs on layersets, layers and tables loaded

@ryanbooz I tried to improve the docs around layersets, the latest version is live here. The beginning of the page tries to illustrate the layerset definition and how that maps to tables loaded to Postgres. The rest of the page has been restructured a bit too.

Hopefully this helps clarify how all of those components interact, the docs will continue to be polished. :+1:
