Added the project logo to the README, as well as some badges.

Additional tasks:

tweaked the README formatting a tiny bit
updated CI/CD
- Erlang 26
- rebar3 3.22
- added support for manually kicking off a CI/CD run in GH Actions
- added a weekly scheduled run of CI/CD
