refactor tex files

If this repo is eventually going to have multiple EGAs in it, is it worth splitting up the tex files for each chapter (like schemes.tex) into separate files for each section, and put all in a new subdirectory? (I'm happy to do so if that's the case)

• Pros: it makes it easier to see which sections still need finishing, as well as easier to find where you are in general.
• Cons: it doesn't affect the reader at all so if you're not overly fussed either way then it would be a bit of effort for no real reason.

I'll opt for the section files. We can still have schemes.tex etc., but it will essentially be a file containing \input's to the sections.
