Added readme and create-interfaces-interactive script #115

Description

I updated the readme to include the latest packages as well as a brief description of each of them. I also added a section on how to start out and contributing.

I added an interactive CLI script in generate-coa-pdf-template that allows the user to enter the filepath to an updated schema.
