docs: update chart deployment instructions, drop LH requirements #857

What needs to be done

By dropping Longhorn requirements, we will need to update our docs to reflect that.

Why it needs to be done

Longhorn is no longer a requirement, nor even a recommended requirement. Whatever PVC the user chooses should be fine.
