This PR introduces documentation for

[x] The merkle subgraph (entities and example queries) - useful for Airstream integrators
[x] The Envio indexers (depends on https://github.com/sablier-labs/v2-subgraphs/pull/23 being merged)
[x] The v2-merkle-api backend services - useful for Airstream integrators
[x] Airstream app features

All these items will live under the APIs section of the documentation

Haha thank you @smol-ninja! Novels are so 2023, docs are the new hype!

Will integrate your feedback as well as @gavriliumircea soon, alongside the final airstreams-features sections (and pictures).
