Add Backstage to platform prototype

Changes

• Adding documentation for how to easily provision
• Removed the backstage directory since we create backstage in the other repo
• Added on some sample components that we can automatically reference in the backstage build so that the service catalog automatically populates some sample data for the user (they can delete it if they’d like)
