I'll probably remove header image and other images are generated by me, so there is no direct link to them.
Then it's better to mention that, those image are created by you and you want to release that in license ....
All other resources and theme elements are licensed under the GNU GPL, version 2 or later.
Is that enough or should there be extra paragraph that images are also under that license?
I don't think it's enough as the reviewer will check in for URL and since those images don't have URL. You need to mentioned that. Whenever, the reviewer see the images, they will try to check for source. So, you need to mention the source like yours/theme.

That's actually the exact same text I use in my readme and have never had an issue. The text it the readme covers this perfectly, really.
If anyone has a question about a particular resource, you only need to point them to that statement. No need to list every item if the item belongs to you and is packaged within the theme just like there's no need to list every PHP file in the theme. They fall under the license and copyright of the whole theme.
