Do 3 circuits with 3 tracks each. Each track could correspond to 1 player with random final track thrown in at the end.

EDIT: A better idea might be just 6-8 selectable tracks. This way, they can all be accessible through the start menu and are more obvious to new players than a cup selection.

Tracks so far:

Fire track
Halfpipe track (needs more scenery like moving ships)
Simple track
Seafoam track
Snow track

Make last track a clear tube in a digital/machine setting
