Upgrade to Pydantic 2, and some others

Quite a lot of upgrades and generally replaced bits and pieces here including:

• pydantic upgraded to 2.1
• Added pytest-aiohttp to get the loop fixture
• Removed pytest-toolbox as it has been deprecated
• Added dirty-equals as it superseded pytest-toolbox
