There should be shared specs that each engine adapter can run to ensure minimum compliance. This would cleanup the engine adapter specs a ton and be a huge help when implementing a new engine adapter.

[x] Rewrite Matterhorn adapter spec to pass shared spec
[x] Rewrite Elastic Transcoder adapter spec to pass shared spec
[ ] Rewrite Test adapter spec to pass shared spec
[x] Write documentation about how to write a new adapter using shared spec
