Add support for Ruby 2.7.z releases #183

Ruby 2.7.0 was released on 12/25/2019, and in accordance with the charter of the current phase of the Component Maintenance Working Group, the CircleCI configuration for this should be updated.

I've made some progress trying to advance this with https://github.com/samvera/hydra-editor/pull/185, but please freely disregard this in favor of another approach if that is preferred @randalldfloyd

This was resolved by @fnibbit with #187 and #188, thank you very much resolving this and releasing version 5.0.2!
