Update to use Hyrax Docker instead of Nurax for testing Hyrax #438

Hyrax has a Docker build that provides an internal test app (.dassie) for testing a Hyrax-based application and is a better starting point for folks interested in trying out Hyrax locally than the Nurax Docker build. Nothing changed for Hyku info.
