I can only replicate this issue when using security hardened sandboxes (drop rights enabled). Otherwise the installation does succeed inside a standard sandbox with MSI exceptions and the click-to-run template enabled (although I still receive notifications about NtRenameKey, schtasks.exe, and BITS not being implemented). However, trying to sign in or create a Microsoft account during the first run of any office program causes it to freeze.
I can confirm the issue as reported in the first post, it seems specific to Office 2021 and not other versions (so far).

No, it is not installed in the real system.

I experienced this too. Any chance you found a way to make the Microsoft sign-in work?
What happened?
I attempted to install microsoft office 2021 inside Sandboxie plus and it failed. I just wanted to try out the new office version. There are 3 error popups attached. Please find a fix to make it work. Awaiting for a solution. Thanks

I can confirm it also on an empty sandbox.
Did you previously enable some security policy settings outside Sandboxie?
I only enabled "Controlled folder access" in Windows Defender.
