Bumps the stellar-sdk to the latest version and changes the code to account for the new type declarations.
Balances of liquidity pools are ignored because fetching the pools based on their ID poses additional overhead and it is not clear how the balance should be shown in the UI.
Also updates the package-lock.json file to lockfileVersion 2.
