how do I want to map the higher frequencies to the color of the LED?

First of all maybe use 16 bands instead of 8, so it is more detailed.

Possible approach:

implement Ringbuffer
weigh the frequency bands exponentially (lower frequencies less weighed and higher ones more)
save history of this weighed value in ringbuffer
use average of all values in ringbuffer as H value for HSV
test and adjust :)

It is really strange, when the LED is lit up the microphone sends other signals in comparison when the LED isn't lit up (wtf) Switched to fading mode while fft for now...

Maybe work on color mapping some time later
