Our install docs refer to https://github.com/scipp/ess/blob/main/docs/environments/ess.yml for installation. Some users also want to use Mantid but may not know how to do this. I suggest we should therefore:

Add a second environment file that includes mantid::mantid.
Add a subsection or paragraph in the install docs, explaining how to install with Mantid.
