Cleanup dormant/early SCITT projects #22

As the drafts have evolved, we had several early implementations to drive the current specs. Several have become outdated and suggest they should be removed.

Proposal to archive the following repos, marking them as no-longer maintained:

[x] scitt-api-emulator
[x] did-web-demo
[x] scitt-examples

I suggest archiving everything, and directing folks to the IETF WG page in data tracker
