It would be useful to be able to convert to VMware as well. (Forgive me, though, since I have no idea how big of a request this is.)

It's a good idea. I don't know how much effort it is either. I don't have a license for Vagrant's VMware provider, so I don't know what box format it uses. If someone who has bought that wants to develop Vmware support for vagrant-mutate, I'd be happy to merge their contribution.
