Update README with Instructions for Activating Virtual Environment

Description

This PR introduces a revision to the Scribe-Data repository's README, specifically to the "Environment Setup" section. Whiling setting up the environment, I realized even though I have created a virtual environment, I have installed everything outside of it, as I didnt activate it. Updating the Readme will help others to setup the environment smoothly.
