I've very slightly rebalanced incubation period to potentially be slightly longer (but not often). but the overall symptoms need work...

The symptoms that transfer at the current state. I think this needs fixing/randomising slightly slightly trickier to do though as symptoms is a more complex data structure, not just a single value.

will need to write a "mutateSymptoms" function
