Update sct version in dependencies #58

Context

The purpose of this issue is to update SCT version in README dependencies to v5.3.0 when it is released.

In the project's README right now, the sct version is SCT 5.0.1. It was not updated beacause of #31, but I could not close the issue #18 because the fix was in SCT v5.1.0 (see https://github.com/neuropoly/spinalcordtoolbox/pull/3116).

When https://github.com/neuropoly/spinalcordtoolbox/pull/3313 is merged and included in SCT 5.3.0 release, we can update the dependencies to it.
