Having jitsi-videobridge (https://jitsi.org/Projects/JitsiVideobridge) plugin for audio/video functionality would be nice to have.

As far as I know, couple other well-known xmpp servers (e.g. openfire, ejabberd) already have a plugin for jitsi-videobridge.

Agreed, any sort of audio/video integration would be great!

Do you have any specific ideas how we might implement this?

Unfortunately I have no knowledge of it other than having it installed once as Openfire plugin.
