Can't write special letters like " | "

Bug description

MacOS: pressing the left option and i gives "no symbol at point", and nothing written on screen.

Actually, I use a version 30.0.50 macOS. I'm using CENTAUR as base for my own configuration, but I have not changed any init-xxx.el regarding anything with writing. I've added danish calendar and some LaTeX, but I really try to not ruin your fine configuration
