I think one aspect of what I want to end up with is something like a transcript. These would either be quotes or paraphrases, which could then be linked as sources for info on other pages. The meeting would be the source and the snippet would be related to the location somehow.
UPDATE: After several experiments, we did indeed end up with transcripts (see e.g. https://github.com/seandenigris/Living-Library/commit/9eb0e3cf445ff3d144a54f1965d29b087cf09dda).
