I'm having a similar issue (restarts right around 30 minutes consistently) when
using version 3.1-beta2. I am on a Samsung Fascinate, Froyo 2.2, and ED03 radio.

Your wireless tether 2.07 works flawlessly (except it doesn't like to accept
access control unless the screen is on ...?).

i'm using 3.1 b6, tethering works "perfectly" if the following:

it's the first time running tether after reboot

do NOT use the phone to do other things while tethering. if text messages
arrive, ignore them

don't disconnect and reconnect wifi client

keep the battery cool by opening the back while tethering, if it gets hot,
it'll crash

after finishing with tethering, reboot your fone. chances are wifi tether will
crash/reboot your fone when you disconnect tethering anyway

don't switch back and forth between 3g/4g, wifi tether tends to crash/reboot
your fone.

try not to use tethering while on the road. temporary signal loss tends to
trigger crashes as well

---

otherwise, b6 has run for several hours tethering for me at home. i keep it
plugged in and the back open
