chore: :truck: Don't need these files in folders, moving as standalone qmd files #13

In line with previous steps to rename md to qmd files, I've renamed these files and moved to their own files, rather than in folders (that wasn't actually necessary for their use case).

Only needs a quick review.

@lwjohnst86 And just for my understanding: Why wasn't it necessary to include them in folders and as index.qmd within those folders for these use cases?
