Update examples for Copernicus Data Space Ecosystem users:

@Adrok24 I updated the configuration doc and put a link to the CDSE config section in example notebooks. Could you please review it again?

If @zigaLuksic think those examples and the CDSE config section is alright, we can try to push it to be released before the winter break.
