Might as well leave an issue here, try to see what causes some of it at some point.
examples off the top of my head:
loading savestate with full soul, or while gaining soul -> freezes soul counter at the value before loading the state, even if savestate has no soul
loading savestate at 1 hp "randomly" stores the 1hp state "hunched over knight" stance/state until quitout
