Update to the newer version of amplify-appsync-simulator #162

There has been a bunch of updates to the source package with the current version standing at [2.3.11] (https://www.npmjs.com/package/amplify-appsync-simulator/v/2.3.11).

Would it be possible to get that updated?

In the last pre-release we just launched, we updated it to version 2.4.1
