Code to apply shapefiles to GCM (xarray) data and to obtain climate variable mean values etc for the actual EEZ area, rather than the closest fitting lat/lon box incorporating the EEZ region

Hiya, I'm back from leave. I'll need to build some similar tools for a primary project and will share that on here so it's hopefully useful. I don't have a timeline yet. It will almost certainly use regionmask
