Editor issues

Hello. How are you?

I just started testing jot here and notice somethings:

jot defaults config to "nvim" as editor, since I was testing it inside a jail/docker, I had not nvim, which makes also jt config unable to execute.

So I have two sugestions:

• Default jot editor to $EDITOR variable
• Point out in the readme that configs also can be edited throught .config/jot

I can also implement thoose things if you agree. I am not experienced with rust, but I would give it a try.

Also, thanks for the work, it seens a nice application!

I am sorry, I didnt read the whole readme and now I see it has ¨jt config editor foo" as an option
