Create an admin page where you could see all of the public projects
It would show you the first image, link to project, person's name, etc.
There would be checkbox to the feature the project, as well as a featured project order — so you can adjust sorting.
You'd be able to filter projects to see which ones are featured, so you could un-feature them / change the order.
